CHOCOLATE AVOCADO LIME CHEESECAKE

Healthy little cacao avocado lime cheesecake bites that are a vibrant avocado green with a dark cacao base. These can be stored in the freezer for months and then popped out when you want a sweet bite.

PREP TIME ~ 15 minutes
ADDITIONAL TIME ~ 2 hours
TOTAL TIME ~ 2 hours 15 minutes

INGREDIENTS

  • ½ cup / 50g Almonds
  • ½ cup / 90g pitted Dates
  • ¼ cup / 25g desiccated Coconut
  • 1/3 cup / 35g Cacao / Cocoa Powder
  • pinch of Salt

LIME AVOCADO FILLING

  • 2 large Avocados
  • 3 large Limes
  • 2 tbsp Coconut Butter / Coconut Oil or Cacao Butter
  • 4 tbsp Sweetener like Maple Syrup
  • 2-4 tbsp Water, to help blending

TOPPINGS

  • 2 tbsp Cacao Nibs
  • 1 tbsp Lime Zest grated

INSTRUCTIONS

  1. Blend all of the base ingredients together until they stick together when pressed.
  2. Juice the limes and place in a small jug blender with the avocado flesh, sweetener, melted coconut or cacao butter and blend until smooth.
  3. Spoon the base mixture into your cases/tin, push firmly with your fingers and dollop on the avocado lime frosting.
  4. Top with the cacao nibs and lime zest then place in the freezer to set.
  5. Enjoy out of the freezer after 2 hours if in individual cases or 3-4 hours in one large cake. If you freeze for longer just take out half an hour before enjoying.
  6. These chocolate avocado lime cheesecakes last at least three months in the freezer.
